Technology & Processing
Integrated dehydration technologies supported by controlled sourcing and full traceability.
Technology & Processing
At Wanbang Food, technology is not an abstract concept — it defines how our ingredients perform, how stable they are in real applications, and how reliably they can be supplied at scale.
We operate integrated processing technologies in-house, supported by controlled raw material sourcing and full traceability. This allows us to deliver fruit, vegetable, and botanical ingredients that meet the practical requirements of international food manufacturers.
Our core processing technologies include:
Freeze-Drying (Lyophilization)
Air-Drying (Hot Air Drying)
Each method serves a distinct purpose, and selection is based on raw material characteristics, application requirements, and cost structure.
Freeze-Drying (Lyophilization)
Key Advantages
Preserves original shape and cellular structure
Maintains natural color, aroma, and flavor
Low moisture and water activity
Excellent rehydration performance
Suitable for heat-sensitive ingredients
Typical Applications
Premium snacks · Dairy inclusions · Functional foods

Air-Drying (Hot Air Drying)
Key Advantages
Efficient and scalable moisture removal
Concentrated natural fruit flavor
Chewy or semi-soft texture options
Stable at ambient storage conditions
Cost-effective for large-scale production
Typical Applications
Dried fruit snacks · Bakery & confectionery · Ingredient blends
Raw Material Sourcing & Traceability
Processing quality begins at the source.
Wanbang Food operates a localized sourcing model, supported by our own hawthorn growing base and long-term partner farms located near our production facilities. Most raw materials are cultivated, harvested, and processed within the same regional supply network.
This proximity allows for better control of freshness, logistics timing, and raw material integrity.
Full Traceability: From Seed to Sale
We are able to trace each product batch throughout the entire supply chain, including:
Seed and cultivar selection
Field cultivation and harvest timing
Primary handling and pre-processing
Dehydration (freeze-drying or air-drying)
Packaging and final delivery
This end-to-end traceability ensures transparency, batch consistency, and long-term supply reliability for our customers.
Processing Safety & Clean Label Commitment
No Additives. No Preservatives.
During both freeze-drying and air-drying processes, we do not use:
Artificial preservatives
Chemical additives
Color stabilizers
Flavor enhancers
Shelf life is achieved solely through controlled dehydration and moisture reduction, not through formulation intervention.
Natural Stability Through Process Control
By strictly managing:
Temperature profiles
Drying duration
Final moisture content
Water activity (Aw)
we ensure that products remain shelf-stable while retaining the natural taste, texture, and aroma of fresh fruits, vegetables, and herbs.
The result is a clean-label ingredient that performs reliably across food applications.
Why Local Sourcing Matters in Dehydration
Short distances between farms and processing facilities help reduce:
Raw material degradation prior to processing
Uncontrolled microbial growth
Variability between harvest batches
This is particularly critical in dehydration, where raw material quality directly determines final product performance.
Our sourcing strategy is designed to support process stability, food safety, and consistent output, rather than opportunistic raw material purchasing.
Integrated Technology Approach
Whether freeze-dried or air-dried, all products are developed under the same core principles:
Known origin
Controlled inputs
Standardized procedures
Verifiable outputs
This integration of sourcing and processing allows us to deliver ingredients that are not only safe, but also predictable and scalable for commercial use.

Technical insights and practical solutions for your ingredient processing requirements.
The choice depends on your final application and budget:
Freeze-Drying (Lyophilization): Best for premium applications where original shape, vibrant color, and nutritional integrity are critical. It offers excellent rehydration and a crisp texture, ideal for yogurt inclusions and premium snacks.
Air-Drying (Hot Air): A cost-effective solution that provides a concentrated fruit flavor and a chewy/semi-soft texture. It is highly recommended for bakery products, confectionery, and large-scale ingredient blends.
We utilize a localized sourcing model. By operating our own hawthorn growing bases and partnering with local farms near our facilities, we minimize the time between harvest and processing. This proximity reduces material degradation and microbial risks, ensuring a stable, high-quality supply chain that is not reliant on opportunistic market purchasing.
Yes. We adhere to a strict “No Additives” commitment. Our process achieves shelf stability solely through controlled dehydration (managing temperature profiles and water activity). We do not use artificial preservatives, chemical color stabilizers, or flavor enhancers, making our ingredients perfect for clean-label food brands.
Absolutely. We offer “Seed to Sale” traceability. Every batch can be traced back through its entire journey: from cultivar selection and field cultivation to specific drying parameters and final packaging. This transparency ensures consistency and helps our clients meet rigorous international food safety standards.
Yes. Our technical team is available to consult on your R&D projects. We can provide guidance on how our ingredients behave in different applications—such as moisture migration in dairy or heat stability in baking—to help you determine the best processing method and specifications for your needs.
